Baked Pumpkin Spice Oatmeal

Baked Pumpkin Spice Oatmeal

topped with a dollop of Greek Yogurt and a dusting of Cinnamon Sugar

Recipe:

6 cups old fashioned Oats

1 cup brown sugar

2 tsp baking powder

1 Tablespoon Cinnamon

1 teaspoon Nutmeg

1 teaspoon Cloves

1 can pumpkin puree

3 eggs- beaten

2 c milk

2 teaspoons Vanilla Extract

Directions: Preheat oven to 350. Grease a 9×13 baking pan if you have it– I used a round casserole dish from Pampered Chef and it was fine 🙂

Combine dry ingredients in a large bowl Add wet ingredients and stir to fully combine.

Spread evenly in baking dish and bake for 25-30 minutes until the top is firm and oatmeal is set. Serves 8-10.

*There are dozens of variations on line. I wanted to use an entire can of pumpkin to maximize the vitamin content per serving. Pureed pumpkin is loaded with vitamin A and dietary fiber. The consistency of my dish was dense and chewy, reminiscent of bread pudding. I did a rough nutrition analysis and it’s around 300 calories per 1 c serving.
