Garlic Makes Everything Better!

I have become such a fan of roasted veggies.  The preparation is simple and the results are fantastic! Humble vegetables caramelize and sweeten while roasting–elevating texture and flavor. Eating a plate of raw veggies doesn’t always appeal, but I can easily make a meal out of a plate of roasted squash, onions, sweet potatoes..etc.

I had been looking at photos on pinterest and saw one for roasted broccoli with slivers of garlic. I knew that I had to try it. Such a simple addition to a very easy recipe–broccoli, olive oil, salt, pepper, and slivers of garlic. I added a lonely shallot that was sitting on my counter. The result was delicious.

I used pre chopped broccoli and pre peeled garlic, which made this recipe come together quickly.

Roast at 425 for 25 minutes.

Perfection.

Served with roasted turkey and whole wheat couscous spiced up with some dried sweetened cranberries.

The kids did not enjoy the roasted broccoli as much as I had hoped, but it is an easy fix to steam a bit for them while ours is roasting. I think that the charred texture of the broccoli tops did not appeal to them. I let them dip it in ranch dressing and it was a “go” after that 🙂

    We LOVE roasted broccoli! Might have to have some tonight…. and roasting brussel sprouts has made me a fan of them. I’m hoping that one of these days I’ll come around to cauliflower.

    This is what I’m making for diennr tonight! I will steam the broccoli today, put it in the fridge and it’ll be ready to heat in the garlicky goodness tonight.I just gotta figure out what I’m gonna make w/ it. I bet my son is going to love this!
