April–such a busy month!

Dental appointments, hair appointments, doctor’s appointments. Even the dryer is on the fritz and requires a visit from the repair man. I’ve barely had time to hit the grocery store! I’m relying heavily on convenience items to help us stay on track with meals at home and avoid the drive through as much as possible.


  Rotisserie chicken with olive tapenade and mozzarella and fresh sliced tomatoes.

I wouldn’t call it a “recipe” per se, but it’s delicious served with some fresh basil and easily converts into toddler friendly meals as well.

For the grown ups:

French bread or whole grain artisan bread of choice

Olive oil, salt & pepper

Fresh basil

Rotisserie Chicken

Mozzarella or Goat Cheese

Olive tapenade

Sliced ripe tomato or sun dried tomatoes

Sliced red onion

**Brush bread with olive oil and toast. Assemble sandwiches and add salt and pepper to taste.

For the little people:

I make little “tapas style” plates for the kids with  cherry tomatoes or carrot stick with dip, shredded chicken, cubes of cheese, small squares of toasted bread with a dab of smart balance.  Add a fruit and some fun food picks and you have an easy meal that kids will love to dip in to!

Even with a super hero in the house…we could all use a break from cooking and clean up!  It gives us more time for evening walks and park visits 🙂

Wish us luck as we are headed to Morgan’s follow up with the endocrinologist soon. Can’t wait to see how things are progressing.
