Quick and Healthy Spring Meals

I’ve been enjoying fresh ripe avocado on top of whole grain English muffins.

One whole avocado on top of a 100 calorie multigrain muffin equals 350 very satisfying calories. High in heart healthy fat and great for your skin and hair!

I’m topping these with Trader Joe’s Every Day Seasoning for a little kick.

And for my next trick?

Try adding two cups of dark leafy greens sauteed in two teaspoons olive oil to a frozen meal to boost volume and nutrition.

I like using Healthy Choice Cafe Steamers — Shown here with BBQ Seasoned Steak and Red Potatoes. I added fresh baby spinach.

For a mere 50 calories I doubled the portion size and boosted the nutrition content. Even better, adding the greens to the spicy sauce mellows the saltiness of frozen meals and gives it a fresher flavor.
