Cilantro Lime and Chickpea Salad–Yummers

I’m having fun with Vegan recipes this week. I made Cilantro Lime and Chickpea Salad from Oh She Glows a few days ago and I think that it might be the most addictive dish that I have prepared. The zesty lime and cilantro sauce on the chickpeas is a perfect combination for those of you who love southwest flavors and cool refreshing salads.

If any of you remember my reluctance to make friends with the food processor.…I am so over it now! I love being able to whip up sauces, dips, shredded veggies…etc in the blink of an eye.

There are two cups of raw spinach in this recipe that contributes to the brilliant green color and provides a power house of nutrients including vitamins A, C, K, and folate. The delicious and nutty chickpeas are also full of protein and fiber. Served over brown rice, this dish was so filling and tasty! In fact, I can see myself making it again this week for lunch…

I am finding it easy to be satisfied with all of the high flavor vegan dishes that I am preparing. Unlike my stab at vegan eating in college where I ate a bunch of tasteless “fake meats” and lots of processed items, I am finally at a level where I am eating far more whole foods and beans and grains. I’m striving to pack as many fruits and vegetables into my day as I can. I do still eat meat with my family and when I am out…but the majority of my food looks like this–healthy and natural and packed with flavor.
