30 Days of Cooking Light–Day 18. Healthy Picadillo

I love Picadillo.

What I don’t love is the grease and heaviness that usually accompanies it.  This version is light, sweet and savory, and bursting with fresh veggies. You can find the recipe here.

If you aren’t familiar with Picadillo, it’s a latin american dish that is made from ground beef, onions, bell peppers, green olives, and sometimes potato. Depending on the area of origin and what is available. It’s a great way to stretch protein portions and makes awesome filling for corn tortillas. This recipe comes together quickly and looks impressive. We served it with roasted potatoes with olive oil and sea salt and a green veggie. It’s equally good over rice or tucked inside of a tortilla.

Jeremy and I may have fought over the leftovers 🙂

    If I can get to the store, I think I’m going to try to make this tonight (but with ground turkey). Was just thinking of what I can make for dinner, so thanks!

    You might try using Hatch green chile in place of the olives for you and Jeremy. I am a self-proclaimed heat wimp and I think it taste good like this 😉
