Hatch Green Chiles–A Love Affair

I’ve been super excited about the return of Hatch Green Chiles to my neighborhood grocery store. Even though it’s still nearly 100 degrees each day…it feels like fall now!

I just finished the ultimate sandwich: Grilled Green Chile Ham and Cheese. So good I was tempted to make a second one…


2 slices whole grain bread

thinly sliced deli ham

1/4 c shredded or 1 slice cheddar cheese

1T Smart Balance Mayo

2 T Pico De Gallo

2 Roasted Green Chiles

1 T Butter (divided)

Make your sandwich and grill over med high heat in a frying pan/griddle with 1/2 T butter on each side. YUMMER.

I’m cooking and chopping again…typing with two hands…and feeling like the broken finger is getting better every day. I plan to resume my 30 days of Cooking Light on Monday. This week has been crazy with preparations for Morgan’s first day of PRE K! So, I didn’t have time to sit down with my recipes and make a plan. However, my new issue of Cooking Light arrived this week and there are some great “Back to School” dishes and kid’s lunch ideas. Consider me motivated once again!

Morgan will be taking his lunch this year, so I am thinking of some cute Bento ideas as well. He’s only staying for lunch one day per week…but I can still get excited about it.

How cute is my little Pre K Student? He was so excited about “open house” this week!

    mmmmm love hatch green chilies!!!! My fav sandwich is Grilled Green Chile Turkey, avacado and Cheese on sourdough!!! Never thought to try it with ham. Thanks!!!

    That’s great that you’re back to cooking already! Can’t wait for more yummy recipes.

    Have you been on pinterest yet? I’ve been finding quite a few super cute bento ideas lately. I’m thinking if I make Poppy’s lunches cute enough, she might just eat a veggie or two.

      I have not been to pinterest–but I’m hearing so much about it these days. I’m afraid it could become an obsession!

      I think carrot flowers go a long way with some ranch dip 🙂
