30 Days of Cooking Light–Day 14. Roasted Corn, Black bean, and Mango Salad

Um yeah…so I literally sprinkle jalapenos over everything that I eat.  Look closer and you will see one sassy little black bean salad that is bursting with flavor from the sweet roasted corn to the perfectly ripe mangos 🙂

I needed a  way to use up the extra roasted corn from yesterday’s shredded chicken tacos. I looked for the recipe for “roasted corn and pineapple salsa” that I thought I saw in last month’s CL magazine…but realized it was Grilled pineapple and avocado salsa. OOps… So, it was off the the stacks of CL annual recipe books to find a way to use my 3 ears of roasted corn and still make dinner for Meatless Monday.

This recipe came together so easily and has great potential to make it your own. J will be packing leftovers in corn tortillas tomorrow for lunch…I’m thinking about adding some to an omelet or stuffing it inside of a pita.

The salad was a slim 200 calories per serving, so we added 1/2 cup of brown rice to each of our plates and topped the salad with 1/4 sliced avocado per person, bringing our total up to about 500 calories for the meal. Filling and flavorful–no one was walking away hungry.

*Note: We omitted the Chipotle Chile called for. J is not a fan. I think it made it easier for Leighton to enjoy without the spice.

Leighton enjoyed the black beans with some shredded chicken from the day before and some avocado chunks. Morgan ate avocado, chicken, and a slice of whole grain bread loaded with butter. We had our 4 year old check up last Friday and the little man is officially on a “high calorie diet”.

    I am soooo enjoying your sharing of recipes….now if there was only some way to have you cook this delicious food and make it available for me to purchase it from you so that I could stock my fridge with these delightful dishes. You really should think about it, Jen….I know there are people out there doing this already, but yours always look and sound so better. Do you think there’s a trust factor in there somewhere?
