30 Days of Cooking Light–Day 12. Cherry Hazelnut Oatmeal

I am so happy to incorporate my love of Blinged Out Oatmeal into my month’s worth of Cooking Light Recipes.

I made a few substitutions: rolled oats in place of the steel cut oats, cherry craisins for the dried Bing cherries, and flax seed oil for the hazelnut oil.  I used what I had on hand in the house, rather than buy special ingredients that were so similar to what I had available. The hazelnut oil was the only thing that I truly could not replicate. However, I weighed the cost of purchasing the oil (15.00) against the likelihood of using it for more than this one recipe (not likely) and decided it was worth the slight loss in flavor. I do think that you could try hazelnut creamer as a stand in for the oil if you have it at home.

I’m sure that I’ve said it before…I’m not a “hard and fast” rule follower when it comes to recipes and cooking. I try to use what I have available and what I think will produce a good result without going through extra complicated steps or purchasing items that are similar to what is already in my home. It keeps my costs down and keeps me from having so many random “odds and ends” in the refrigerator or pantry.

This recipe was fast and delicious. The kids were crazy about the flavor. I just made sure that Leighton’s hazelnuts were tiny pieces.
