30 Days of Cooking Light–Day 10. Sesame Brown Rice Salad with Shredded Chicken and Peanuts

I am in love with this simple and flavorful little dish! It was a fantastic “No Cook” option for us last night. The insane desert heat has made me loathe to enter the kitchen…much less turn on the stove or bake. We substituted precooked brown rice (the 90 second heat and eat variety) and the whole meal came together in about ten minutes with shredded rotisserie chicken and match stick cut carrots available in most super markets.

We also substituted more of the Nellie and Joe’s Key Lime juice for the fresh lime. It worked just fine!

The kids ate the brown rice and chicken without the sauce. I just added chopped tomatoes to their plate for a veggie.

    Another recipe I can’t wait to try, especially with this crazy summer heat!

    Sounds delicious and I like that one serving is less than 400 calories. Where do you get Nellie and Joe’s Key Lime juice? I use lime juice for all sorts of things, and tend to run out when I need it most.

    I get it at Albertson’s…it’s in the juice aisle. They have a website. You might be able to get it from as well 🙂
