30 Days of Cooking Light–Day 9. Baked Mozzarella Bites

These little gems make the perfect after school snack…or in Jeremy’s case…the perfect any time snack!

Morgan helped me make them. They are a great “Cooking with Kids” recipe.

We toasted the panko in a skillet over medium heat…I think that in the future I will make sure that the panko is browned. I wasn’t sure how long to go over the recommended two minutes in the recipe. Our snacks are much lighter in color than the picture in the magazine, but still crispy. Then, we took our chunks of cheese sticks that every mom has on hand and dipped them in egg before rolling in the panko mixture. Pop into the oven for 3 minutes (any longer and they will flatten out like some of ours did) and you are done.

I let our cheese bites cool a bit before giving them to the kids. They were so yummy!! Plus, they are only 100 calories per serving!! WHOOT WHOOT!
