30 Days of Cooking Light–Day 8. Fresh Herb Coated Beef Tenderloin Steaks with Mushroom Gravy

This recipe was just that good.  If you don’t have a lot of confidence preparing steaks…give it a try. It was AHHHMAZING!

We substituted two 8 oz tenderloins for the four 4 oz tenderloins. Let’s face it. We like our steaks….and the bigger cuts brought our calorie count up to 400 rather than 200…but with a 20 calorie side of green beans and a half cup of mashed potatoes (made with smart balance and 2% milk) we were very close to our 600 calorie per meal goal.

The fresh herb rub gave an intense flavor to the meat– 4 cloves of garlic!

You could actually stop there and have a pretty awesome meal…but the white wine mushroom gravy pushed the dish over the top. We used a good quality Chardonnay* because you never cook with something that you wouldn’t drink! You could also use 1 full cup of broth or stock and skip the wine all together if you don’t choose to purchase a full bottle of wine and just use 1/2 cup.

I will be posting tonight’s Meatless Monday Dish tomorrow…but definitely try this dish! It makes a great romantic dinner for two and it’s swanky enough for guests. You will LOVE IT.

*For testing purposes, we used Sterling Vineyards Chardonnay. J and I toured the Vineyard in Napa a few years back and we’re pretty loyal 🙂
