30 Days of Cooking Light–Day 7. Spiced Fruity Oatmeal

It’s actually more of a “Fall Recipe”…but it utilizes pantry staples that I almost always have on hand: dried cranberries, walnuts, apple juice, and spices.

I had to rob a few juice boxes to make it happen and ended up using 4 oz apple juice and 4 oz apple prune juice. The result was a complex autumn spice flavor that was delicious!

Don’t be afraid to make substitutions in recipes. You might have something on hand that works even better than the original recipe. Use your imagination and get creative. We topped ours with smart balance and Jeremy added a splash of half and half. Or…you could leave it Vegan and enjoy it as is.

Leighton loved this recipe without the nuts. It makes a very good infant breakfast cereal. Just make sure that you add the cranberries to the water before boiling to make sure that they are very soft.

Verdict? A comforting hot cereal that would be perfect on a chilly morning.
