30 Days of Cooking Light –Day 1. Meatless Monday’s Three Bean Chili

Last night I prepared Cooking Light’s Three Bean Chili  with a side of Honey Cornbread muffins for dinner.  This is my favorite veggie chili recipe because of how very easy it is to prepare and how delicious it is!

Simplicity is key when your kitchen floor is littered with small children and you don’t have all day to chop and prep.  

The recipe calls for pre-chopped onion, bell pepper, and bottled minced garlic. I have found that using the containers of pre-chopped onion and bell pepper mixes in my local grocery store works great. If you are not able to find these convenience items–it’s still very easy to prepare with one small onion, half of a bell pepper, and two cloves of fresh minced garlic.

Step one: Saute your aromatic ingredients. ( I substituted orange bell pepper. It doesn’t matter. Use what you have!)

Step two: Add spices, beans, tomatoes, and a can of veggie broth (I substituted 2 tsp veggie base and 14.5 oz water)

Step 3: Bring to a boil and simmer 8-10 minutes.

Step 4: Add 1 TBS Corn meal and simmer additional 2 minutes to thicken. Amazing! This changes the texture from soup to “chili”.

Step 5: Garnish and serve.  (Ideas: shredded cheddar, jalapeno slices, green onion slices, cilantro, sour cream, tortilla chips.)

I made the Honey Corn Muffins using a mix made by Krusteaz. The flavor and texture are fantastic!

Morgan liked the chick peas…but not the kidney beans. He ate two corn muffins and a ton of shredded cheese soaked in the broth.  Leighton enjoyed hers all smooshed up with cornbread and shredded cheese. She really seems to be a fan of anything in tomato sauce!

NOTE: This is not a spicy chili. You can adjust the heat by adding more chili powder or using a chopped fresh or canned chili if you desire. I spice mine up with jalapenos and tabasco sauce before serving….that way, it’s still family friendly 🙂

    This sounds YUMMY Jen! Thanks for sharing! I have had the Krusteaz honey cornbread and is was so moist and delicious!

    Can’t wait to see what is for dinner tomorrow night!
