In need of Mojo–stirring up a new blogging challenge!

I have been feeling like a kid on summer vaycay.

I haven’t wanted to blog lately.  I also haven’t wanted to cook very often…leading me to wonder how in the world I would keep “see Mommy cook” going. After my ten week “Lose the Baby Weight” challenge, I felt like I was done with dieting and done with worrying about food for a while. I gave myself free reign to take a break.

Fast forward one month and I am excited about a new challenge to keep it going. 30 Days of Cooking Light. I plan to cook and post a  healthy recipe each day. I’ve been a subscriber to Cooking Light magazine for about 15 years and there is always something to keep me excited about preparing nutritious meals that are delicious and creative. Whatever type of food you enjoy, you can find it in their recipe archives. I appreciate that all of the hard work is done for me. Whatever I prepare will be tasty and low in fat and calories.

Tonight’s meal is one of my favorites: Vegetarian 3 Bean Chili with honey cornbread. Yum!  I will start the Challenge with my first post tomorrow.

    Nice to hear from you and I can’t wait for the chili and cornbread recipes….also can’t wait for one healthy recipe a day…
    I’m leaving for Puerto Vallarta soon for about a week, so I’ll be happy to have those recipes to help eat healthy after this vacation.

      Have a great time on your vacation! I went there once with my family in high school and it was fabulous…probably 100X better as a grown up who can drink margaritas 😉
