Meatless Monday: Linguine with Peas, Basil, Parmesan

We made a simple and kid friendly dish for Meatless Monday this week.


  • 1 pkg linguine or spaghetti (I like Barilla Plus)
  • 3 tbs butter, divided
  • 1 red onion, quartered and thinly sliced
  • 1 pkg frozen peas
  • 1/2 cup basil
  • Salt and Pepper
  • parmesan (fresh)
Cook pasta according to package directions.
Meanwhile, saute onion in 1 tbs butter until translucent. Add peas and heat through until peas are bright green and tender. Add remaining butter and pasta to the dish with a small amount of cooking water (2-3 tbs) salt and pepper to taste. Garnish with fresh basil and shredded or shaved parmesan.
This was such a comforting and easy dish to make. The kids loved it! Morgan picked out his red onion, but Leighton enjoyed hers (minced up finely) as is!
