Meatless Monday’s Vegan Chipotle lime Crispy Fingers, Spinach Salad, Butternut Squash

I am in love with these crispy fingers made by Gardein. They were spicy and crunchy and so convenient to bake and serve.  I added precut “steam in the bag” butternut squash tossed with smart balance and a fresh spinach salad with home made pear balsamic vinaigrette–topped with cashews and cranberries and a sprinkle of blue cheese. YUM.

Morgan enjoyed whole grain chicken tenders with the squash and cashews/cranberries. Leighton enjoyed some butternut squash cubes and a bit of shredded cheese. I am slowly learning to modify what we eat to satisfy everyone!
