Losing the Baby Weight: WEEK 2. Creating volume without increasing calories

Pasta has 80 calories in a half cup cooked serving. When I’m trying to cut back and lose a bit of weight, one of the first things that I do is decrease the amount of pasta in my recipes by substituting steamed vegetables that are lower in carbohydrate, such as broccoli, green beans, bell peppers, onions,and mushrooms. Here’s my take on Spaghetti:

Add sauteed mushrooms, bell peppers, and onion to your sauce. 1/2 cup of these veggies is much lower in calories! (5 calories for the mushrooms–about 20 calories for 1/2 cup of onion and bell pepper)

For my next step–I mix 1/2 noodles and 1/2 non-starchy vegetables for the “pasta portion” 3/4 cup cooked pasta =120 calories and 3/4 cup green beans = 30 calories. Total: 150 calories. That’s a savings of 80 calories for the pasta alone! And yes…those are canned green beans. They are a total guilty pleasure on my part…Jeremy believes I might actually be the one person on the planet that likes them.

The finished product provides a heaping portion of spaghetti with about half the calories. Love it!
