I did say that there would be cooking??

Funny, I had great dreams when I named this blog.

I would be the new Pioneer Woman/Annabel Karmel. I would whip up amazing family treats and feature it all with beautiful food photographs. Then, motherhood creeped in. I do cook, but there are many days when my “Uncooking” style takes over because it is the only way to survive on precious little sleep with two kids and a hubs that works long hard hours.

Here are some of the things I made last week:

Behold, the Meyer Lemon Drop.

Heck yeah, I’m bringing back cocktail hour!  Jeremy found this recipe after I came home excited about a bag of Meyer  lemons from Sun Harvest. Never had a Meyer lemon? Me neither…but I salivate every year when Cooking Light does a spread on them in the spring. They are softer skinned, fragrant lemons with lower acidity and a slightly herbal taste. And the lemon drop? Very VERY good. So good in fact, that we were busy boiling a second batch of Meyer Lemon syrup for an encore.

Then there was the Vegetarian Mandarin “Chicken” for Meatless Monday.

Does it still count as cooking when you merely fire up a skillet? I found these Gardein Mandarin Chick’n pieces in the freezer section at the grocery store and had to try them out. Sauteed with some olive oil and topped with the included sauce–they were delicious and fast with steamed jasmine rice and broccoli for our Meatless Monday.

Yes, it was a busy week. But we’re still cooking!

    My Mama planted a Meyer lemon tree in her front yard for the sole purpose of making lemon drops. They are so good!

      they are amazing!! Is it hard to keep the tree growing?

        My Mom lives in Northern California and her tree is growing good, but that is a very different climate than the desert. It was given to her as a gift by her best friend (and martini partner in crime) in a pot and it was already probably 3 feet tall and had a healthy start. But I must say it’s pretty awesome to want a cocktail and be able to go grab fresh lemons. They also have a tangerine tree and my Dad’s specialty is hummingbird martinis. Wow, I’m really not trying to make my family sound like a bunch of lushes! Let’s just say we are fun people!
