Meatless Monday: Simple Mozzarella Focaccia

What’s a girl to do on Valentine’s Day when the hubs is working late and two little rug rats are making it near impossible to cook?

Start with a simple pre made focaccia bread from the grocery store….throw it in the toaster oven to warm it up.

Pile it high with slices of fresh mozzarella and pop it back into the toaster oven until the cheese is melted. You could get crazy and use a pizza stone and your oven…but I had no time with the kiddos feeling less than generous while I was trying to accomplish anything in the kitchen.

Top it with a store bought olive tapenade–this one had a bit of goat cheese for extra flavor–and garnish with fresh herbs. I would have liked shredded fresh basil, but the grocery store didn’t oblige. Instead, I went with some green parsley that I already had at home.

Sprinkle with salt, pepper, red chili flakes if you like some kick…

Don’t forget a bright green salad with some sweet dried cranberries to add a pop of red.

Finish with a glass of chardonnay.

Dinner for two ready when your Valentine is working late. Meatless and oh so simple.

P.S. We had fresh raspberries with whipped cream for dessert. Garnished with just a kiss of raw sugar.

I sort of rock the “no cooking” cooking.
