Meatless Monday: Cumin scented black beans and rice and Stuffed Southwest Mushrooms

Short on time today–we whipped up some black beans and rice full of red bell pepper, garlic, and onion and topped with cilantro. I had purchased these awesome portobello mushroom caps stuffed with roasted corn, pepper jack cheese, and green onions that we threw into the toaster oven. The result was one tasty southwestern meal.

Next week J’s parents are coming for a visit and the hubs surprised me by asking what we would have for Meatless Monday while they are here?!? I’m pretty sure that my father in law doesn’t eat beans so I am thinking that I could play it safe by serving the mushroom tarts again. Anyone have a tried and true veggie suggestion that appeals to carnivores? Bean free of course!

    You cant go wrong with a good veggie lasagna.
